在便利的网络时代,足不出户点点手机就能收到新鲜的菜品,传统的菜市场还有存在的意义吗?除了购物之外,菜市场还能给我们带来什么?带着这些问题,2021年7月中旬,gooood的小编们来到了北京市朝阳区盛福小关菜市场与三源里菜市场随机采访了12位路人,来听一听他们是怎么看待菜市场的。

在采访的12位路人中,有5位退休人员,4位在职人士,一位年轻母亲,还有两位家长在菜市场工作的儿童。12位受访者中的11位都住在菜市场附近,步行、骑自行车/电动车、或者乘坐公交车前来,其中有受访者表示与其花费不少时间在寻找车位与停车,不如选择公共交通更为方便。相对于菜市场的基础设施来说,受访者更看重产品本身。几乎所有选择来菜市场买菜的人都认为菜市场中的产品,看得见摸得着,可以挑选退换,除了质量有保证外,还有自主选购的乐趣。三分之一的受访者提到了室内菜市场需要降温通风的问题,在炎热的夏季,潮湿闷热的环境不仅不舒适,还会滋生异味与细菌。受访者中一位回族的阿姨希望菜市场能更多地考虑到少数民族的需求。此外,我们还注意到这两个菜市场休憩空间都比较少。

关于“买菜app”这个问题,在受访的年轻人与老年人中呈现出两种不同的态度,接受采访的所有大爷大妈都认为网上买的东西质量没有保证,退换麻烦,而菜市场里的菜品质量相对稳定,极少存在欺骗消费者的状况,但只有一部分年轻人持这种观点,其他年轻人认为则认为网上买菜省时间省事儿,更为方便。除此之外,我们还在三源里菜市场采访到了一些外国友人,对于他们来说,实体菜市场比买菜app更加友好,其中一位外国阿姨认为菜市场中应该增加更明显清晰的标识系统,与分区平面图等。对于理想中的菜市场,大家最基本的期许就是干净整洁,售卖的产品质量好;夏季凉爽的室内环境与周边停车设施则是锦上添花。

In the convenient network era, one can buy fresh vegetables by only click on their phones, then what is the point of the existence of traditional food markets? Other than shopping, what can people receive from the market? With all these questions, in the mid-July of 2021, the editors from gooood went to markets at Beijing Chaoyang Sheng Fu Xiaoguan and Sanyuanli randomly interviewed 12 different passers-by and asked them what they thought of food markets.

Among the 12 interviewees, five were retired, four were middle-aged employees, one was a young mother carrying her baby, and two little girls whose parents work in the market. 11 of the interviewees lived nearby the market and went to the market on walking, on bicycles, or by bus. Some people mentioned rather than spending hours finding a parking spot, they would rather take public transit. Comparing to the infrastructure in the market, the interviewees put more attention on the product itself. Almost all the people who chose to shop in the food market were attracted by the authenticity of the product, being able to see and touch right away, the possibility to chose and return. Other than the promising quality, it also has a selective purchasing pleasure. One-third of the interviewees mentioned indoor market should put more attention to the problem of temperature ventilation. In the hot summer, the humid environment not only caused discomfort experience, but it also will become the cradle of odors and bacteria. One of the women from Hui nationality wishes the market can have more consideration to the needs of ethnic minorities.

Elders had a completely different attitude with young people on the question of “online shopping”. Most of the elders think online shopping does not have a promising quality of their product and inconvenient to return it, but the market had a stable quality, rarely have the situation of deceiving the consumers. About the ideal market, the very basic wish is clean and neat, better product; cooler temperature and parking log is a positive point.

菜市场,一个充满烟火气息与市井情调的地方。想要深入了解一个城市,那么去菜市场看看就是一个很好的选择。编者认为菜市场虽然辐射范围较小但是一个汇聚人情的场所,这是网络购物不能替代的。

Food market, a bustling place, if you want to deeply understand a city, then it must be the wonderful choice for your need. The editor believes that although the vegetable market has a relatively shopping place, it is a thoughtful place where people gather, which cannot be replaced by online shopping.

虽然如今的菜市场逐渐脱离了“脏乱差”,但是作为最基础的生活单元,在人们的理念中它似乎与“美观、舒适”尚未沾边,一是优秀的菜市场建筑案例目前在我国还是相对较少,二是菜市场的社会属性并没有得到充分的重视。如何让菜市场在便捷的网络时代不会逐渐消亡呢?gooood为大家推荐以下案例,来看看我们本土的建筑师是如何定义菜市场的:

Although nowadays the food market gradually got out from the title of “dirty”, as a basic unit of living in people’s opinion it is never relevant to “beauty” and “comfort.” Predominantly, a high standard market is still relatively rare in China, secondly, the social attribute of the food market did not get enough attention. “可以感受到设计在造价方面的限制;摊位与建筑的结构一体化思考挺好的,很建筑的做法;但是摊位自身的设计包括摊位自身的排水,摊位的店招,食品的射灯位置等,以及摊位的分区,如果考虑摊位的分区,一个标准摊位的模式可能不会太适合,比如肉食区会比副食区要更大一点的操作空间,排水要求也会不同”

“喜欢这样的公共建筑,不计回报的探讨农村建筑,感谢这样的建造师。建筑上看,形式落地后和周围环境挺融洽。
谈谈农贸市场的观察,商户不愿意来农贸市场的原因恐怕还在于形式功能的落地障碍。
类似这样的市场,和城市的商户有很大的区别,摊主流动性强,基本是谁先来谁占。哪里获客成本低,就去哪里,为什么不喜欢遮阳避雨的市场,而喜欢马路边。所以痛点不在于雨棚的形式,也不在于摊位的形式,而在于位置……在于集市的特点。在基地位置限制的情况下,如何在功能上吸引商户和客流是超出建筑范畴的深层次思考。”

“中国太需要这类可持续利用的临时性市场了,无论是一二线城市,还是三四五六线城市的菜市场,大多都是脏乱差的状态,脏水坑都无处下脚,作为上班族,不可能每天都去超市购物,一般都是下班后顺便去市场买点菜回家。在倡导少叫外卖绿色环保的同时,提高菜市场的空间环境,也可以吸引更多白领上班族的买菜回家做饭的欲望。临时性与可持续性增加了市场经营的可变性与便捷性,好的设计,是在为我们本真的生活提供更多舒适性与愉悦性,即便不是高大上的场所,也可以创造出令人愉悦的空间。伞柱标识点个赞,360°无死角”
