新青桃开业了,空下来的时候,小胖坐在院子里,想哭又想笑。
当年在云南当了两年炊事兵,退伍时领导百般挽留,小胖拍着胸脯立下军令状 — 有朝一日必将自己开餐厅做老板,那是2001年。
平日里的小胖嘻嘻哈哈卖萌撒娇,但只要聊到做菜他立马两眼放光,满脸陶醉。他的人生理想就是四处寻找好食材,接着窝进厨房,一道一道把他们做成菜,然后端上桌给客人享用,满足至极。
总有客人问“为什么叫青桃?”,小胖说他想了很久很久。现在,十年过去了,似乎终于有了答案。

The new QINGTAO opens, sitting in the yard, Xiaopang wants to cry, but also wants to laugh when it’s leisure time.
Xiaopang used to be a military cook for two years when serving in the army in Yunnan. His leader retained him by all means when he was discharged, but Xiaopang insisted to leave, and swore to have his own restaurant one day. It was the year of 2001.
Xiaopang is usually flighty, acting cute, and not very serious, but when the topic is about cooking, his eyes will light up, with intoxication all over his face. His ideal life is to look for great food material, and then stay in the kitchen, making dishes, finally serve on the guest table. That is the greatest satisfaction.

The guests always asks about the name of the restaurant, why QINGTAO. Xiaopang said that he thought it over and over. Now ten years passed, it seems that he finally gets the answer.

2009年,他还在杭州某知名饭店做厨师。杭州有若干设计师寻思着开家中餐厅。在一年前的2008年6月8日,这群设计师合伙开了蜜桃(对,就是那家蜜桃 Metoo Cafe)。小胖回忆起那天,设计师们找到他,他带着他们去到临安老家,由小胖妈妈掌勺做了一桌菜,席间大家对食材与手艺赞不绝口。饭没吃完,合伙开餐厅的事就这样愉快地决定了。

In 2009, Xiaopang was a cook in a famous restaurant in Hangzhou. Several designers in Hangzhou were thinking of opening a Chinese restaurant. On 8th June, 2008, this group of designers opened Metoo Cafe. Yes, it’s THAT Metoo Cafe.

Go back to the day when this group of designers turned to Xiaopang, and Xiaopang invited them to his hometown in Lin’an. Xiaopang’s mom prepared a table of dishes, which were appreciated by all. Restaurant partnership was decided during this wonderful meal.

2009年,餐厅开在了龙井的双峰新村,茶叶博物馆边,掩映在群山环绕中。取名“青桃”,因为是小胖第一次自己做老板,因为是设计师们第一次尝试中餐厅,那年,大伙儿都刚30出头,都很青涩,也很愣头青,却如桃园结义般聚集起来。

未来会怎样,究竟有谁会知道,不必想太多,只顾一路向前走。
“十年,青桃居然开了十年了。”小胖感慨地摇了摇头,继而又笑了 “真是没想到啊”。当初抱着试试看的心态,却坚持下来了。

In 2009, the restaurant was opened in Shuangfeng of Longjing, next to the Green Tea Museum, which is surrounded by mountains.It was named “QINGTAO”. For Xiaopang, this was the first time to be a boss. For the designers, this was the first attempt of Chinese restaurant. In that year, everyone was in their early 30s. In Chinese, QING means young and not very sophisticated. TAO means 桃园结义, which was an old story about sworn brothers.

Nobody knows what will be the future like. We just need to keep on moving without thinking too much.
“WOW, it’s been ten years.” Xiaopang shakes his head and then burst into laughter, “I never thought about this”. At first, they just wanted to have a try, now they stick with it.

青桃新店选址在四眼井,杭州最古老的社区之一。古杭州人的生活用水全靠水井滋养,到80年代杭州全城仍拥有5549口水井。如今保留下来的四眼形制的水井仅存5处,最有名的就是这个虎跑路与满觉陇交叉口,历史1100年之久。

The new QINGTAO is located in Siyanjing, which is the oldest block in Hangzhou. In old times, people in Hangzhou was nourished by wells. By 80s of 20th century, there were 5549 wells in Hangzhou city. Now, there are only 5  preserved four-eyed wells (“Siyanjing” in Chinese), among which the one in the crossing of Hupao Road and Manjuelong Road is the best-known, with a history of 1,100 years.

从餐厅入口到吧台,曲折蜿蜒,有点儿江南街巷里弄的意思。驻足点菜牌前,小胖拿着手写板一边推荐一边快速记录,然后“嚓”一声扯下来交给吧台里的妹妹,干脆利落。期间,服务的跑菜的从身前身后急匆匆快步而过,客人赶紧收收腰欠欠身,然后会心一笑,仿佛置身在狭窄热闹的巷子里。

From the entrance to the bar counter, the path twists and turns, seems like the lanes and alleys in Jiangnan. Standing in front of the menu board, Xiaopang has a handwriting board on hand, recommending while fast recording, and then tearing the page to the waitress behind the bar counter, coming straight to the point and without the slightest hesitation. During this process, the waiters and waitresses are moving fast through, and then the guests give way to them with a tacit smile. It’s just like in a narrow and busy alley.

大厅里的4组散客桌,以悬浮的墙体包围,镂空几处错落的窗洞,既私密又有趣,还可以与外界互动,孩子们最喜欢从窗洞、从围墙底部探出身子和脑袋来玩捉迷藏,心中暗藏偷窥的小确幸。

There are four tables for casual visitors in the lobby. The lobby is surrounded by floating walls, with several irregular window openings, making this area private and interesting, also ensuring interacting with outside space. Children like to lean out from the window openings and wall bottom to play hide and seek, with the happiness of peeping.

落座大厅的客人有时酒过三旬醉意浓,不知不觉提高了分贝,喧嚣似街坊酒肆。于是有好心人提示小胖加些吸音材料降降噪,小胖满脸微笑却理直气壮地回答 “不,我们要的就是这股子人气儿”。

For the guests in the lobby, after drinking some wine, they raise their voice unconsciously, making it much like a noisy wine shop in streets. Therefore, kind people reminded Xiaopang to use acoustical material to lower the noise. However, Xiaopang refused with a smile, “no, this is exactly what we want”.

来店里的基本都是老客,必点菜之如爆炒腰花、臭鲑鱼、醋炒鸡、土猪肉、花生苗,老客们闭着眼睛都要。小胖说一家餐厅80%是产品,食材好工艺好是根基,再加10%环境和10%服务,客人的味觉和胃才会记住你。

The guests are generally regular guests, and their “must dish” like Quickly Fried Pig Kidney, Rotten Salmon, Vinegar Fried Chicken, Village Pork, Peanut Seedling are ordered without seeing the menu. Xiaopang said that 80% of a restaurant is about the dishes, with a basis of good food material and cooking technique, another 10% is about the environment and the last 10% is about the service. Thus the guests will keep the restaurant in mind.

小胖总会带来惊喜。某一天某一餐,他会给你端上一道从未见过的新菜,比如最近的生蚝鸡蛋蒸臭豆腐。每个听说这道菜的客人都会重复一遍 “什么?生蚝还能蒸臭豆腐?”,此时小胖总会得意地一笑 “能啊,在我这里啥都能啊”,然后看着客人挑起一块裹着鸡蛋羹的臭豆腐放进嘴里,抿上嘴唇,眉梢间透露出细微而满足的表情,于是小胖知道自己又成功了,全身上下每个细胞都散发出十足的自信。

There is always surprise from Xiaopang. During a meal in one day, he will serve a totally new dish, for example, the recently served Steaming Oyster Egg and Stinky Tofu. Every guest who hears the name of this dish repeats it:”What? Oyster can be steamed together with stinky tofu?” By this time, Xiaopang always smiles with proud:”Of course, everything is possible here in QINGTAO”. And then he will watch the guest to put a piece of tofu wrapped with egg custard into his mouth, revealing the subtle and satisfactory expression. Xiaopang knows he successes again, therefore every cell of him proves his self-confidence.

十年过去,小胖依然亲自下厨,坚守着青桃餐厅,桃园结义的设计师们也依然埋头深耕在各自的设计领域,大家都从愣头青跨入了不惑,而青桃,依然还是青桃。看看周遭,有多少人依然在从事十年前的行业从未转行?大浪淘沙,能坚持下来的实属不易,也正是这份不易成就了彼此。

待他自熟莫催他,火候足时他自美。
致青桃!

Ten years has passed. Xiaopang still insists on cooking by himself, sticking with QINGTAO. The sworn brothers of designers also insist on their own design field. Everyone steps from 30s to 40s. However, QINGTAO is still QINGTAO. Looking around, how many people can work on a career for ten years without changing? Great waves sweeping away the sand, the ones who persist are exactly not that easy. It is this uneasiness which makes the achievements.

Don’t rush him when he’s not ready, and he will look great when he’s ready.
