三个庄园牛排屋(3FARMS STEAK HOUSE)主理人Lily和她的团队五年前在杭州创立了“三个庄园牛排屋”品牌,严格遵循“四亩地,一头牛”的澳洲牧场标准,甄选世界顶级牧场提供的优质牛肉,引入中国市场。本店是他们在金华地区的首店。金华店呈L型分布,商场内与户外沿街分别有一个出入口,把最好的窗面都留给客区。

The owner of 3FARMS STEAK HOUSE is called Lily, who established “3FARMS STEAK HOUSE” brand in Hangzhou fives years ago together with her team. They strictly adhere to the Australian farm standards, which is “one cow in four acre land”. Quality beef provided by top farms on earth is introduced into Chinese market. This steak house is their very first one in Jinhua. 3FARMS Jinhua is in L shape, and there are two access, one is in the mall and the other is along the street, leaving the best window side to seating area.

材质选择 — 红砖
Material Selection – Red Brick

三个庄园金华店地处江北第一百货商场1F,拐角街铺,双入口,客流丰富。因为寸土寸金,所以面积相对较小,仅有140平米。如何在有限的面积内打造吸睛的空间,引客入店,成为金华店设计的首要挑战。材质上比较巧妙地选取了“红砖”,造价成本不高,但使用者较少,有其独特性和差异化。同时,红砖又暗合红酒储存的酒窖场景,还能谐音“砖业”,非常讨巧。

3FARMS Jinhua is located on the first floor of No.1 Department Store in Jiangbei. It is in a corner, with two access, so the customer flow is rich. The rent is high, so the area is relatively small, only 140 sqm. How to make impressive space within a limited area, so that the customers can be attracted, that becomes the primary challenge for the designer. Red brick is a smart selection of material, because the cost is not very high, and it’s rarely used, makes it unique and different. Meantime, red brick happens to coincide with the wine cellar. In Chinese, Zhuan is homo-phonic with Zhuanye which means professional, which is really skillfully.

红砖之外,选取“黑”作为顶和地的主色调,辅以黑色的酒柜、餐桌、沙发,打上柔和的暖光,从玻璃窗望进去仿佛一场舞台剧正上演,落座于其中的客人就是剧中人,每一位都是自己那一帧故事的主角。外围途经的路人,就像观看一出出表演,禁不住幻想自己也是其中之一。

Besides of re brick, black is chosen as primary color of the ceiling and floor. The wine cabinet, dining table and sofa are all black, lighting with soft and warm illumination. Seeing through the window glass, it is like a living stage drama, and customers seating there are the performers, acting as the leading part of his own story. The people walking by are watching the performance, and cannot help imaging that he/she is one of the actors.

设计手法向Carlo Scarpa致敬
Design Method Respects to Carlo Scarpa

Carlo Scarpa(卡洛·斯卡帕,1906-1978年),意大利现代理想主义建筑师,对材料、节点和工艺有着自己独特的理解,将空间的交接发生在不同功能、部件与材料上,有其鲜明的风格特点。金华店的设计中借鉴了Carlo Scarpa大师的建筑节点手法,打破常规的材质平铺,将红砖以不对称或无规则的方式叠加、堆砌于外立面、墙体、橱窗之上,形成视觉上的聚焦点与冲突感。墙面上红砖的内凹处理,既避免了单一材质满铺的单调与呆板,增加了空间的层次,又可以将环境光暗藏其中,营造温馨的就餐氛围。

Carlo Scarpa(1906-1978)is a Italian modern idealist architect, who has his own particular understanding on material, node and craft. Distinct style features are made by connecting spaces with different functions, components and materials. The design of 3FARMS Jinhua learns architecture nodes method from Master Carlo Scarpa, breaking the conventional way of material overlay. Instead, red bricks are overlaid in asymmetric or irregular way all over the facade, walls and above the show windows, making great focus and conflict in vision. The concave red bricks on the wall can avoid monotony and rigidity by one kind of material overlay. At one hand, levels of space are increased, at the other hand, ambient light can be hidden, making a cozy dining atmosphere.

入口处,红砖层层叠加,仿佛颠倒各个方向都可进入的剧院式台阶,形成空间错位感,富有趣味性与体验感。

Entrance, red bricks are overlaid layer by layer. It looks like theater steps which can be entered from every direction, making a feeling of spatial mismatch, full of enjoyment and sense of experience.

专业熟成 (Dry Aged Beef)
Professional Dry Aged Beef

什么是熟成?– 熟成,在特定的温度和湿度下,利用牛肉本身的酶,分解与软化肌肉纤维组织,转化肉里的脂肪与蛋白质,随后鲜美的肉汁被风干硬化的表壳锁在其中,反过来渗透纤维组织,熟成所需时间20-45天不等。熟成后的牛肉,嫩度和风味都远超于未经处理的牛肉,但过程缓慢且成本高昂。首先,熟成过程中,肉质自重损耗非常大,最终可能只有原重的40%。其次,干式熟成需要特定的0-2℃恒温、68-82%恒湿,无菌且特定风速的环境中进行,因此需要配备专业的熟成柜,其售价数万元起。三个庄园是金华首家拥有专业熟成柜的牛排馆。漂亮通透的熟成柜,嵌入红砖墙体内,亮起干净清冷的灯光,置于店铺入口处,在熟成牛肉的同时,也是一个极好的展示与科普。

What is “dry aged”? “Dry aged” means under specific temperature and humidity, the enzyme of beef itself can be used to decompose and soften muscle fiber tissue, and to transform the fat and protein in beef. Then tasty gravy is locked in dried shell to penetrate fiber tissue in return. The whole “aged” process takes 20 to 45 days. Dry aged beef is much better than unprocessed beef both in tenderness and flavor, but the dry aged process is slow and costly. Firstly, there will be great weight loss during this process, and the final weight might be only 40% of the original. Secondly, dry aged process needs constant temperature of 0-2℃, and constant humidity of 68-82% within sterile and specific wind speed environment. Therefore, professional dry aged cabinet must be equipped, which costs more than 10,000 RMB. 3FARMS is the first steak house equipped with professional dry aged cabinet. The beautiful and transparent cupboard is embedded into the red brick wall, shining with clean and cool lights. It is located at the entrance part, acting as a superb exhibition and science popularization at the same time of beef aging.

在金华店里,客人堂食的所有牛肉都已是熟成产品。遇上有客人想额外购买熟成的生肉,店铺也可以提供预订服务。客人选定牛肉,留存在店内代为熟成,待到时间足矣风味成熟,客人便可迎接它们回家,在家享受烹饪与饕餮的乐趣。“砖”业制作的三个庄园,因为专业,所以信任。

In 3FARMS Jinhua, all the served beef is dry aged. If customers want to purchase raw meat of dry aged beef, reservation service is provided. People can choose the beef by themselves, and then leave it in the store to finish the dry aging process. When it is ready with great flavor, the buyer can take it home to cook and enjoy the wonderful dish. 3FARMS made of “Zhuan” (red bricks), worth trust because of profession.
